Alinea-Black Truffle Explosion

Dish 9: Black Truffle explosion with romaine and parmesan.

The Black Truffle Explosion is a famous Alinea dish, and though Achatz claims he doesn't believe in having a signature dish, it really will remain in my mind in a way similar to Thomas Keller's Truffled Egg Custard.

One pops the spoon into the mouth and immediately the ultra-thin pasta shell breaks and intense truffle flavor floods the senses. Amazing. This is a dish to dream about.
