"Dish" 4: Distillation of Thai flavors.Somehow, the chef had infused the flavors of fish sauce, Thai chili, and some other Thai ingredients (maybe lemongrass and galangal, can't remember). Unlike the general sense of confusion that pervades after a sip of brandy, I could easily distinguish the Thai flavors in this drink, which surprisingly conveyed only the flavor and none of the heat or saltiness normally present in the underlying ingredients.
